Are you ready to take taco night to the next level? These grilled pork fajitas are easy enough to throw together that this can be a weeknight meal, but they’re so delicious they just might change your life.

I mean, with this kind of recipe we can do Taco Tuesday every dang night.

You can make these pork fajitas on the grill, on the stovetop, or even in the oven. My personal favorite method is to use my smoker, but they’re just as delicious on the grill, or anywhere else. The key is the flavorful seasonings, the juicy tenderloin, and all of the tasty toppings!

A few notes about this recipe:

  • I recommend using a pork tenderloin to cook these pork fajitas. It’s a very tender cut of meat, and is incredibly flavorful.
  • If you have some peppers on hand, sauté them up with some onions, oil, and seasonings for a delicious taco topping. We like to use Poblano peppers, but any kind will do great.
  • Tortillas are key when it comes to a good fajita. Don’t skimp on them! Our local grocery store offers fresh, homemade tortillas and they truly make all the difference. You won’t regret taking the time to do some searching for the perfect tortillas!
  • We keep our toppings more or less simple so that the flavor of the meat can shine – some shredded cheddar, a little sour cream, and a few peppers are all you need!

Now, let’s chat leftovers!

We like to have this as fajita tacos on the first night, but for leftovers all bets are off. This pork fajita meat is delicious in a quesadilla, on nachos, or even chopped up into eggs with some salsa mixed in and tortilla chips crunched over the top.

Now I’m getting hungry again.

You can have pork fajita sandwiches, pork fajita salad, pork fajita breakfast tacos – the sky’s the limit!

They heat up really well in the microwave but, like all leftovers, they’ll taste best if you heat them up on the stovetop or in the oven.

What to Serve with Pork Fajitas

When we have taco night, we generally like to keep the sides pretty simple!

Our favorite sides include chips and salsa (or guacamole, or queso, or all three!), rice, and beans. That’s all you need for an incredible fajita dinner.

Don’t forget a margarita or a good beer on the side to round things out!

Grilled Pork Fajitas

These grilled pork fajitas are an easy, delicious weeknight meal that will quickly become a part of your regular rotation.

Prep Time 15 minutes
Cook Time 25 minutes
Additional Time 1 hour
Total Time 1 hour 40 minutes

Ingredients

  • 2 pound pork tenderloin
  • 1/2 cup orange juice
  • 1/4 cup olive oil
  • Juice + zest from two limes
  • 1 large handful cilantro leaves
  • 1/2 onion, chopped
  • 1 tsp cumin
  • 1 tbsp brown sugar
  • Salt and pepper to taste

Instructions

  1. Combine all ingredients (except for pork) in blender or food processor and blend to create marinade.
  2. Place pork tenderloin and marinade in a gallon-size freezer bag or a large bowl with a lid and refrigerate for at least 1 hour (but up to 12).
  3. When you're ready to cook, grill pork tenderloin until internal temperature reaches 145 (approximately 25 minutes).
  4. Allow to rest for at least 5 minutes prior to slicing and serving.
